Fall Harvest Pizza w/ Roasted Butternut Squash, Crispy Sage, Ricotta Cheese & Cider Caramelized Onions

Serves 2-3

INGREDIENTS

PIZZA DOUGH (can also use premade)

  • 1 1/2 cups flour 

  • 1/2 cup warm water

  • 1 1/2 tsp active dry yeast

  • 1 tbsp honey

  • 1/4 tsp salt

  • 1 tbsp olive oil

PIZZA TOPPINGS

  • 1 small butternut squash (sliced)

  • 1/2 cup olive oil

  • 1 tbsp honey

  • 1/2 tsp cinnamon

  • 1/2 cup apple cider

  • 1 sweet onion (sliced)

  • 2 cloves garlic

  • 2 cups ricotta cheese

  • 1/4 cup freshly grated Parmigiano Reggiano

  • 1 bunch of sage 

  • Salt & Pepper

DIRECTIONS

PIZZA DOUGH

  • In a large bowl, combine water, yeast and honey

  • Mix until blended and let sit until foamy (approx. 10 min)

  • Add in flour and olive oil into the large bowl, mixing until dough comes together

  • On a floured surface, knead dough into a ball; work the additional 1/2 cup flour into the dough if needed

  • In the same bowl rub the inside with olive oil, then place the dough back inside, turning to coat

  • Cover with a towel and place in a warm place to rise for about 1 1/2 hours.​

PIZZA ASSEMBLY

  • Preheat the oven to 425 degrees F

  • In a small bowl whisk together 2 tbsp olive oil, 1/2 tbsp honey, cinnamon, ricotta cheese, salt & pepper

  • Drizzle olive oil over baking sheet and spread thinly sliced squash out on a baking sheet; Roast until tender (about 20- 25 minutes), flipping veggies halfway through; Remove and set aside

  • In a pan caramelize the onions in 1 1/2 tbsp olive oil; stirring frequently, until softened. After 10 minute, slowly add in the cider and let it cook into the onions until liquid is dissolved and onions are caramelized to your liking

  • When pizza dough is ready, lightly flour a counter and use your hands or a rolling pin to roll out the dough

  • Place the pizza dough on a greased baking sheet and then use your hands to gently tug, pull and push the dough into your desired shape

  • Spread the cheese mixture over the dough and add the caramelized onions and roasted butternut squash over top.
    Bake the pizza for about 25 minutes, remove from the oven

  • Add olive oil-tossed sage and parmesan cheese overtop; place back in oven for an additional 5-10 minutes

  • SLICE & ENJOY!
