CAULIFLOWER CRUST PIZZA

Homemade Cauliflower Crust Pizza
Serves 2-3
INGREDIENTS

1/2 head of cauliflower (4 cups of small florets)

1 egg, beaten
-
2 tbsp flaxmeal (ground flaxseeds)

1/3 cup almond or oat flour
-
1/4 cup grated parmesan cheese (optional)
-
1 tsp dried oregano
-
1/4 tsp garlic powder
-
1/2 tsp salt

DIRECTIONS

Preheat your oven to 450F, Line a baking sheet with parchment paper and set aside

Make your cauliflower “rice”

Grate uncooked cauliflower in a food processor, until it forms a rice-like texture

Steam “rice” in boiling water for 4 min; Drain into a fine-mesh strainer

Once you’ve strained the rice, transfer it to a clean dish towel or cheesecloth, twist it up and SQUEEZE, getting out as much water as possible, until “rice” is dry.

If using rolled oats and/or flaxseeds, process them in a food processor until oats and/or flax seeds achieve a flour-like texture

Mix the flours, Parmesan and spices in one bowl. In another bowl, blend the cauliflower rice with the beaten egg

Combine dry and wet bowls into one and blend thoroughly (don’t be afraid to use your hands!

Form dough into a ball, and place on top of the parchment-lined baking sheet (not wax paper, important so that it doesn't stick). Pat into a circle (about 1/3 inch thick)

Bake about 20 minutes, or until lightly browned with crispy edges.

Remove and add toppings of choice (Literally, ANYTHING YOU WANT)

Bake an additional 5-10 minutes; Slice and enjoy!
