Peanut Butter & Banana Stuffed Challah French Toast
INGREDIENTS

8 slices of challah
-
3 eggs
-
1 cup non-dairy (nut or coconut) milk (may sub heavy cream)
-
1 tsp cinnamon
-
2 tbsp vanilla extract
-
¼ tsp salt
-
2 bananas
-
Peanut Butter (or your favorite Nut Butter)

2 tbsp Honey (optional)
-
4 tbsp butter (may swap coconut oil)
-
Maple Syrup
PB Banana French Toast
DIRECTIONS

Slice Challah (approx 3/4 inch thick)

Beat eggs
-
Mix in milk, eggs, cinnamon, salt & vanilla extract
-
Spread peanut butter on one side of two slices of challah
-
Cut bananas into small slices
-
Add sliced bananas on top of PB side of the challah, drizzle honey overtop & sandwich the two pieces of bread

Dip sandwich in batter (and let soak for at least 30 sec)

Heat pan over medium heat and add butter
-
Add sandwich to pan and flip once cooked on both sides

Slice and drizzle with maple syrup
