Peanut Butter & Banana Stuffed Challah French Toast

INGREDIENTS

  • 8 slices of challah

  • 3 eggs

  • 1 cup non-dairy (nut or coconut) milk  (may sub heavy cream)

  • 1 tsp cinnamon

  • 2 tbsp vanilla extract

  • ¼ tsp salt

  • 2 bananas

  • Peanut Butter  (or your favorite Nut Butter)

  • 2 tbsp Honey (optional)

  • 4 tbsp butter (may swap coconut oil)

  • Maple Syrup

DIRECTIONS

  1. Slice Challah (approx 3/4 inch thick)

  2. Beat eggs

  3. Mix in milk, eggs, cinnamon, salt & vanilla extract

  4. Spread peanut butter on one side of two slices of challah

  5. Cut bananas into small slices

  6. Add sliced bananas on top of PB side of the challah, drizzle honey overtop & sandwich the two pieces of bread

  7. Dip sandwich in batter (and let soak for at least 30 sec)

  8. Heat pan over medium heat and add butter 

  9. Add sandwich to pan and flip once cooked on both sides

  10. Slice and drizzle with maple syrup

  11. Enjoy!
